With the fall spirit in full swing, I made simple, in-season pumpkin spice cookies with my mother. The best part about the four ingredient recipe is that it doesn’t need a trip to the grocery store; the items were dug out from the fridge to make the dough using the cookie mix with a touch of butter and an egg.
With the dough that was store bought (yes, I took the simple path), I baked the cookies. The hardest part was shaping the cookies; the dough stuck to the spoon like it was allergic to the cookie sheet. My solution: a
cookie scoop; it made perfectly-sized dough clumps to throw in the oven.
The cookies came out, and I was greeted by the wonderful pumpkin-y smell of fresh fall. The process was a wonderful experience to share with my mother; sharing the cookies together was definitely worth the work.
